Aged for 6 months in oak barrels.
Perhaps best known for the great sweet wines of Sauternes, where it is the dominant variety, Sémillon can also produce excellent dry white wines when properly cared for.
An expressive bouquet of aromas, where acacia, lemongrass, orange, honeycomb, peach, baked bread, and sweet spices unfold against an oak background.
Soft and full on first contact. Well structured, with acidity matching thickness and richness. Complexity and flavor intensity culminating in a persistent citrus finish.
AGEING POTENTIAL: 3-4 years
FOOD PAIRING: shellfish and fish in white sauces, cod croquettes, smoked fish, risotto with seafood or mushrooms, pork cooked with fruit or exotic spices. Mild, cow’s milk graviera cheeses, such as those from Naxos or Tinos.
