Aged for 24 months in French oak barrels, 50% of which are renewed each year. Unfiltered.
A complex bouquet of aromas that refer both to the variety and to the passage through barrels. Sour cherry jam, dried plum, fig, black pepper, and bitter chocolate meet hints of vanilla, cedar, and leather. Soft and warm on first contact. Exuberantly rich and mature, with well-integrated tannins, it does not lose its elegant side thanks to the measured acidity that enlivens it. Ripe fruit and spices make their presence felt throughout, right up to the very long and persistent finish.
AGEING POTENTIAL: 20 years
FOOD PAIRING: large game and red meat, especially when cooked with spices. Beef tenderloin with Madeira sauce, tournedos rosé, and grilled beef liver are just a few of the dishes that could also stand alongside it.
