On the nose, intense aromas of citrus, melon, and lemon blossom. The floral aromas are immediately apparent, even to those unfamiliar with wine. Honey and smoke in the background express the very distinctive barrel. Usually, after the first or second year, some benzoic aromas (like aged Riesling) appear, which are characteristic of the variety and eagerly sought after by many lovers of such wines. On the palate, it is full-bodied, dry, and oily with refreshing acidity and a very long finish, while the citron stands out on the palate. The finish leaves a lasting fruity sensation on the palate.
AGEING POTENTIAL: 5 years
FOOD PAIRING: fatty fish dishes (lobster, crayfish, large fish such as grouper, salmon, or eel), poultry, game birds, light meats with strong white sauces, and yellow oily cheeses.
