100% Assyrtiko
Grapes are harvested from the historic vineyard of Megalo Spilaio. Fermentation takes place in stone tanks in the 14th-century winery building. Halfway through fermentation, about half of the must is transferred to French Foudres barrels. The rest of the must is transferred to amphorae. The wine matures for about 10 months.
It has a bright lemon color in the glass. On the nose, aromas of citrus, bergamot, and white flowers stand out, while on the palate, the cool acidity and minerality of Assyrtiko give it liveliness and a long finish.
FOOD PAIRING: seafood, fried small fish, poultry with white sauces, pork with white sauces, fatty fish.
