After harvesting, the grapes are cooled for 24 hours in a cold room and the next day they are taken directly to the press without crushing or extraction. Vinification then takes place in stainless steel tanks cooled to 18 °C. Part of the wine matures in second-use oak barrels, while the rest remains with its lees, gaining structure and body.
The color is bright pink-salmon. The nose is dominated by very intense aromas of red fruits such as cherry, strawberry, pomegranate, and pink grapefruit. White flowers, roses, and forest fruits. The palate is rich, full of freshness and nerve, with very good acidity and balance. It has a long and intense aromatic aftertaste.
FOOD PAIRING: Lobster pasta, risotto with shrimp, summer Mediterranean and exotic flavors.
