Organically grown Chardonnay
Fermentation in small French oak barrels and aging with the lees for a period of 5 to 6 months.
Bright yellow with light green highlights. Intense and complex aroma of yellow fruits, citrus, wax, and subtle notes of smoke and vanilla. Cool on the palate with good acidity and volume. Long finish and duration.
The label refers to Viola Odorata (sweet violet), a plant with a short root, an underground stem, and leaves that form a rosette. In Greece, it grows in meadows and on the slopes of Mount Olympus at an altitude of 700-900 meters. It blooms in April and May and its flowers are deep purple in color.
FOOD PAIRING: oily fish, smoked fish or even fish with white sauce, mollusks and shellfish, caviar compositions.
