Aged for 5 years in oak barrels
Under the October sun, bunches of selected Agiorgitiko grapes are spread out to slowly dehydrate. After 3-4 weeks, the semi-dried grapes are harvested and pressed exhaustively until they yield every last drop of must. The process takes more than six hours and results in a very small amount of highly aromatic and concentrated must.
Then, slowly and with difficulty, fermentation will begin, which will eventually stop on its own before it is complete, leading to the birth of a sweet wine. We will “forget” this new wine for the next 5 years in small, old French oak barrels, where oxygen will slowly endow ANATOLIKO with a more serious and complex character.
But why EASTERN? Perhaps because somewhere there in the east, at the foot of the Caucasus, lie the roots of all wines.
